Happy December, Decadent Chocolate Pudding, & ENERGY!

 Decadent Chocolate Pudding

Chocolate Pudding
Compliments of
Ashley Craft, Class of 2011
Ingredients:
1/4 cup almond butter
1/4 cup medjool dates, pitted
1/8 cup water
1/4 cup cocoa powder
1 medium banana
1 tbs coconut oil
1 tsp vanilla
small pinch sea salt

Directions:
Combine ingredients in a food processor and process until smooth. Serve.
 
This recipe from fellow student Ashley, sounds amazing.  I can't wait to try it.  It is made with only healthy whole food ingredients so give it a try.  Let me know how you like it.

Healthy Pumpkin Latte

I love pumpkin latte's in the fall -- a little bit of a comfort food on a rainy fall day like today.  But I am off sugar and prefer to use mainly Stevia

I just thought I'd look up the sugar content in a Starbuck's Pumpkin Latte so I could make a rational decision on how many I might want to consume this fall, if any. 

I usually get a grande size and I have to admit even I was surprised at how much sugar is in it.  Without the whipped cream it has a whopping 47 grams of sugar!

Just for a bit of perspective here, a Snickers bar has 30 grams, which is too much for me for a treat.  So you can see, I won't be having any Starbucks Pumpkin or other flavored latte's this fall.  

But, I did make one at home that was so delicious.  I used Stevia which is an all natural sweetener with no calories, or harmful effects to the body.  I actually had some freshly cooked pumpkin that I was making pumpkin soup from yesterday, so here's how I made it:

Healthy Pumpkin Latte

Make a simple sugar with Stevia:

2-3 packets of Stevia (to taste)
1 cup water
Bring it barely to a boil, simmer and stir for a minute or so.
Add:

4 TBS pumpkin puree 
2 tsp of pumpkin pie spice 
(or  just cinnamon).
Simmer for a few minutes.  Cool and refrigerate.  Should keep a week or two in fridge. This should make a few latte's.

Add 2 TBS to your steaming hot coffee and stir with a mini whisk.  Add steamed milk & stir.  I like a little foam too, but don't have a milk steamer.  I looked online and found a great way to make it in a jar, by shaking!

Steamed Milk (without a steamer)

1 cup organic half and half, put it in a jar with a lid and shake it vigorously for about a minute.  Then microwave it for about 30 seconds. lt makes the foam hold up well and heats the milk.  Pour the milk into the coffee & pumpkin mixture, holding the foam back with a spoon, then top with foam and a sprinkle of nutmeg.  

This is REALLY good.  If you don't happen to have fresh cooked pumpkin, you can open a can of organic pumpkin puree.  You can also use milk or low fat milk, but won't get quite as much foam. 

You are saving 47 grams of sugar, so enjoy, gullt-free!

Mini Zucchini Millet Muffins - Gluten Free

Mini Zucchini Millet Muffins

Gluten Free.  You can make these dairy free by substituting water for the milk.  Still wonderful.

Preheat oven to 425 degrees F. 
Line muffin pan with baking cups.  You can use either mini (so cute) or regular muffin pans, just adjust baking time.

Mix together in a small bowl:
3/4 cup of warm milk of choice
1 tablespoon raw apple cider vinegar
Let stand for 30 minutes while you prepare the rest.

Mix together in a large bowl:
2 cups millet flour (freshly ground if you have a Vita-Mix )
2 tablespoon freshly ground flax seed
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg

 Mix well then add:
1/3 cup of coconut oil (melt if needed)
2 eggs, lightly beaten
1 cup of grated zucchini
1 grated apple or ½ cup grated carrots
¼ cup organic agave syrup or maple syrup (optional)

Add contents of small bowl and combine well. Fill muffin pans 3/4 full. Bake mini muffins about 10 minutes, or until a toothpick comes out clean.  Bake regular muffins about 15-18 minutes or a toothpick comes out clean.  Remove from oven, cool slightly and remove from pan.  These are delicious served warm with butter or add some maple syrup or honey for a sweet treat.

PS: You can use other flours and oils, but these are my favorites since I am not eating wheat.  Millet is similar to corn meal but I love the flavor for a change.

Coco-Choco-PB Energy Bites

Last night after dinner I was really wanting a chocolate or sweet treat and my food supply was sadly missing anything along those lines.  Usually I can find something for my sweet tooth that is satisfying and healthy, even if its a tablespoon of peanut butter, but alas I was also out of that.  It was a little late and too rainy to run to the store, and I made do with a cup of tea.

So today I decided to whip up some healthy, tasty  tidbits of chocolatey goodness to keep in the fridge or freezer for the next time my sweet tooth kicked in.  They turned out really well and are very satisfying as well as very easy to make.  All the ingredients are healthy too, so win/win for me!

Here is the simple recipe

These are dairy-free, gluten-free and raw.  You could also substitute a different natural sweetener if needed.  So simple, here is the recipe:

1-1/2 cups shredded organic coconut
1/2 cup organic cocoa powder or cacao
1 tablespoon organic extra virgin coconut oil (melt if needed)
1/4 cup organic agave nectar
2 tablespoons organic Crunchy Peanut or Almond Butter
1/2 tsp. vanilla extract
pinch of sea salt

Stir all this together until well mixed and shape into balls.  You can cover with a little finely shredded coconut if desired (I used the Vita-Mix to make the coconut flakes very fine).  Keep in refrigerator.

eXcited About Xylitol

Why are we not hearing more about Xylitol?  It has tremendous dental benefits, including preventing tooth decay and plaque buildup, and repairing enamel damage.  I have been using toothpaste with xylitol for a few years, but I truly didn't know it was this significantly beneficial until I did some research.   In addition to dental benefits, it also heals and repairs the body, unlike sugar which causes problems in the body.  It also builds immunity, protects against chronic disease, and has anti-aging benefits.

Benefits of Xylitol

  • Delicious sweet taste... with no unpleasant aftertaste
  • Helps reduce the development of dental caries
  • Reduces plaque formation
  • Increases salivary flow to aid in the repair of damaged tooth enamel
  • Provides one third fewer calories than sugar
  • May be useful as a sugar alternative for people with diabetes (on the advice of their healthcare providers)

Medical Benefits - Like sugar, except good for you

Although xylitol tastes and looks exactly like sugar, that is where the similarities end. Xylitol is like sugar, except good for you. While sugar wreaks havoc on the body, xylitol heals and repairs. It also builds immunity, protects against chronic disease and has anti-aging benefits.

 Xylitol has been used as a sweetener in foods since the 1960's.

Xylitol is only slowly absorbed and partially utilized; therefore a reduced calorie claim is allowed: 2.4 calories per gram or 40% less than other carbohydrates. In addition, the body does not require insulin to metabolize xylitol, which has made it a widely used sweetener for the diabetic diet in some countries. In the U.S., xylitol is approved as a food additive in unlimited quantity for foods with special dietary purposes.  


Xylitol has also been shown to provide nasal relief.

The addition of precise amounts of xylitol to saline nasal spray has been shown to make it more effective in moisturizing and clearing the nasal passages. Xylitol helps prevent bacteria from adhering and helps the body’s natural cleansing processes to clear away these harmful bacteria, reducing the risk of infection. In addition, research has shown other medical benefits of xylitol due to its effect on many types of bacteria.   Read more here.

Dental Benefits - The Xylitol difference for teeth

Tooth decay happens when bacteria in your mouth consume the sugars we eat. When you eat food containing ordinary sugar (sucrose), it gives bacteria on your teeth energy, allowing them to multiply and start making acids that can eat away the enamel on the teeth. This "acid attack" causes tooth decay and cavities to begin to form.

Xylitol is a natural sweetener derived from the fibrous parts of plants. It does not break down like sugar and can help keep a neutral pH level in the mouth. Xylitol also prevents bacteria from sticking to the teeth. This is how it protects the teeth from tooth decay. With Xylitol, the acid attack that would otherwise last for over half an hour is stopped. Most people are not aware of this benefit because such a claim makes xylitol into a drug, crossing a boundary not allowed by the Food and Drug Administration.

 

Less bacteria, less acid – healthier teeth!

Because the bacteria in the mouth that are causing cavities are unable to digest xylitol, their growth is greatly reduced. The number of acid-producing bacteria may fall as much as 90%. No acid is formed because the pH of saliva and plaque does not fall. After taking xylitol, the bacteria do not stick well on the surface of the teeth and as a result, the amount of plaque decreases.



Repairing damaged enamel

Research has shown that the use of xylitol also helps repair damage to the enamel. Saliva in itself protects the mouth and teeth. Stimulated saliva in particular contains all the components needed to repair early cavities. If sugar is only taken a couple of times a day, the saliva can do the job alone. But most people take sugar so often that the mouth's own defensive tools are not enough.

Saliva that has xylitol is more alkaline than saliva stimulated by other sugar products. After taking xylitol products, the concentration of basic amino acids and ammonia in saliva and plaque may rise, and plaque pH rises as well. When pH is above 7, calcium and phosphate salts in saliva start to move into those parts of enamel that are weak. Therefore, soft, calcium-deficient enamel sites begin to harden again.
While reversing a rising trend of negative health and high health-care costs won't happen overnight, improving your own health can begin sooner than later, and xylitol can have a significant influence on that trend.

Nutritional Benefits - How can we combat the sugar epidemic?

The dangers of sugars and refined carbohydrates in the diet have been well documented. Excess consumption of sugar can cause hypoglycemia and weight gain, leading to diabetes and obesity. Sugar also raises blood pressure, triglycerides and bad cholesterol, increasing the risk of heart disease. Children who consume excess sugar have difficulty concentrating and learning. And that’s just scraping the surface of the havoc sugar causes on our systems!

Considering Americans consume an estimated whopping 68.5 pounds of sugar per person, per year, the nutritional need for a safe, natural sweetener that tastes great and does not lead to health problems is more critical than ever. That sweetener is xylitol!

The "sugar" that won't wreck your body

While Xylitol is just as sweet as table sugar (sucrose), it has about 40% fewer calories and 75% fewer carbohydrates. That in itself can make a big impact on your waistline! Importantly, xylitol is slowly absorbed and metabolized, resulting in very negligible changes in insulin. Xylitol therefore won’t raise your blood sugar like regular sugar, which puts tremendous strain on your system, causing negative health effects.


A healthy choice for many diabetics

Thanks to its insulin-independent nature, xylitol has been used in Germany, Switzerland, Russia and Japan as a preferred sweetener for diabetic diets since the 1960’s. If you do have diabetes, however, it’s important to consult your doctor or diet professional before incorporating xylitol into your daily diet.

A sweet choice for many recipes

Xylitol products are readily available for use in cooking and baking. Xylitol won’t break down with heat like some other sweeteners, so it’s the perfect choice for just about any recipe that calls for sugar. Converting your recipes couldn’t be easier –since xylitol has the same sweetness as sugar, simply use the same amount (1:1)!

All Natural Sweetener - Stevia

I would like to introduce you to my best sweetener friend, Stevia.  Not only does Stevia taste great but it is a friend with benefits!

Stevia has many favorable and exciting health benefits and it is completely non-toxic. The herb is nutrient rich, containing substantial amounts of protein, calcium, and phosphorous, as well as sodium, magnesium, zinc, rutin, vitamin A, vitamin C, and over 100 phytonutrients. Here are some of its health benefits:


Weight Loss - Stevia contains no calories and actually reduces cravings for sweets and fatty foods. Studies have shown that it also minimizes hunger sensations. Once again your sweet tooth can be satisfied guilt free. It is not only a diet aide, but beneficial for you too. New reports are stating that if taken 20 minutes before a meal, you will feel satiated sooner.

Diabetes -  Known for its nourishing properties for the pancreas, stevia has been used by diabetics for centuries as a sweetener and also as a method of controlling blood sugar levels. Studies have shown that stevia can regulate blood sugar levels when taken appropriately. This is not meant to replace current practices of a diabetic, but as an aide to control diabetes.

Digestion - Improves digestion and intestinal function, soothes an upset stomach and promotes quicker recovery from minor ailments. It is best to consume stevia as a tea for this effect, although other methods may also be beneficial to digestion and minor ailments.

Skin Care - Applied to the skin, stevia treats acne and other skin ailments. It also protects against premature aging. Place a few drops of stevia liquid concentrate on your skin, rinse after 30 minutes and feel the difference. Stevia may also be used on skin infections. After a 20 second stinging sensation, the pain is significantly reduced and the healing time is accelerated.
 
Addictions/Cravings - Reports keep coming in that the use of stevia has reduced cravings for tobacco, alcohol, sweet and fatty foods. Chew directly on a stevia leaf or take a few drops of the stevia liquid to help curb cravings. Take 20 minutes before a meal to feel satiated sooner.
